Hearts of palm fruit (Pejivaye) Salad




Preparation

In a salad bowl, mix potatoes, “pejivayes” and eggs.  Mix well.  In another bowl, mix the rest of the ingredients. Add the second mixture to the potatoes with the “pejivayes” and eggs. Mix in circular movements to not damage potatoes. Cover with plastic and refrigerate preferably overnight. Serves 12.

½ kg peeled, chopped and cooked potatoes
12 Cooked Hearts of Palm Fruit (pejibayes), peeled and chopped
3 chopped garlic cloves
1 finely chopped onion
1 finely chopped sweet pepper
1 bunch finely chopped cilantro
1 spoon of mustard
3 chopped hard-boiled eggs
1 cup of ZARCERO Sour Cream
Salt and pepper to taste
Hot chili to taste
