Cassava Tamale




Preparation

Preheat oven to 350°F. Grease large rectangular Pyrex with Barrita CORONADO.  In a bowl, mix cassava and CORONADO Turrialba Cheese.  Beat the egg whites to form peaks. Add sugar and salt.  Then, add the yolks one by one and keep beating. To the cassava mix, add the melted Barrita CORONADO, the raisins and the egg mix little by little, alternating with the dry ingredients and the CORONADO Milk. Place in the Pyrex. Bake until brown. Let cool for 15 minutes before cutting it.
Serves 12.

Tips: You can serve it cold or hot.  It can be kept outside the refrigerator for 1 day.  Serve as bread or rice substitute.  You can freeze it once baked and well packed.
